Time with Mum was lovely

My mum stayed with us for two weeks before she had to fly across the pond back home. It was amazingly wonderful to have her here. My minions adored having time with her. I loved having time with her. We spent a night drinking far too much Shandy and being very, very silly. It was lovely. 


Best moment ever? Just to be cheeky, we took her to a local "Irish Pub". Namely a pub owned and run by an Irish couple. As we sat there at the table, my mum was looking around, amused and laughing at it all. She read the menu and when the waitress arrived she said in her thick accent, "M'dear... what precisely is 'Clare Roasted Chicken'? " The waitress had the good sense to blush and admitted, "That's our attempt at making our menu sound more Irish." My Mum burst into laughter and said, "Well, I was wondering as I am from County Clare and wasn't aware we had an official roast chicken recipe!"


I could not stop laughing through dinner and Mum kept shaking her head at me.  The owners came by to meet her as they said they liked to meet all the "folks from home" that came into the place and they had a nice chat and laughed more. They even ordered us more ciders and then waived our cheque!


My mum had a habit of showing love via food... on the two weeks she was here she made.... shortbread, chocolate chip cookies (6 dozen), double fudge Kahlua espresso cookies (6 dozen), peanut butter cookies (6 dozen), sugar cookies (6 dozen), cream puffs(2 dozen), banana fudge cake, chocolate chip brownies, blueberry banana muffins (1 dozen), banana nut muffins (1 dozen), blueberry pancakes, blueberry scones (2 dozen), sweet cream scones (1 dozen), soda bread, pasta bread, yeast rolls, gingerbread cake, soft pretzels and blueberry/raspberry freezer jam. I managed to NOT gain a single pound. It could be the fact I spent a half hour on the elliptical machine every night when everyone else went to bed and that I was giving away baked goods to everyone I know.


My mum is amazing but cripes she is hard on the waist line!
